And your find of the "Joy of Cooking"! Wow. Love the bit about squirrel, possum and bear. Heh. Somewhere, I have a collection of cookbooks translated from medieval recipes, even Apicius (ancient Rome). I have made garum, which was a commonly-used, fish sauce. I made it from scratch once (layering fresh herbs, sardines, and a layer of salt two fingers high in a sealed container, setting it in the sun for 7 days, then mixing daily for 20 days until it becomes liquid). All that effort (trust me, fresh sardines in Cincinnati is a tough find) and I couldn't stand the stuff.
I've also made a baked rabbit stew from a redacted Aztec recipe. Cocoa was one of the seasoning used. From what I remember, it wasn't bad, but I don't especially care for rabbit.
But the recipe for green tomato chutney? Pass it on!!!
Cheers - !
